Summer Squash and Zucchini, Angel Hair Pasta – Dairyfree

The grocery store is a great place to find inspiration for recipes and Wegmans had a big display of Zucchini and Summer squash so we grabbed a few and were ready for our cooking challenge. 

Other than grilling, we have limited experience cooking with Zucchini and Summer squash. We love pasta so why not try to make a yummy sauce using our new ingredients.

We weren’t so sure about how this idea would come out but happy to report this is the perfect summer pasta dinner. 


  • 1 zucchini
  • 1 summer squash
  • 1/2 red onion
  • 1 packet of angel hair pasta
  • 3 tablespoons olive oil
  • 1 tablespoon nondairy butter
  • 1 tablespoon garlic
  • 1 cup pasta water


Peel zucchini and squash. Cut in half, then cut into one inch chunks. Cut onion into strips. (So easy you don’t even need a pic.) 

Heat nondairy butter, olive oil, and garlic in large frying pan on medium. When hot, throw in vegetables and stir.Cook until vegetables are soft. (About 5 minutes)Boil water and add pasta to pot of water.Make sure the pasta makes it in the pot or you could have some extra excitement with tonight’s dinner. Now we have experienced our first kitchen fire. After you get the fire under control…. Remove a cup of water from the pasta and add it to the vegetables, and stir.Drain pasta and toss with vegetables.Yum! Enjoy!
