Cilantro Lime Fajitas -Dairyfree, Tomato Free

We love fajitas! Unfortunately many fajita recipes call for tomatoes and cheese so Carson can’t order them at our fav Mexican restaurants. No worries, our recipe is dairy and tomato free, taste better and is way more fun to make than eating out anyway! It’s so fresh and delicious you won’t miss the red sauce and won’t need the cheese!

Ingredients:

  • 1 pound chicken breast
  • 1/2 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 1 tablespoon garlic, (crushed wet kind, in jar)
  • 1/2 red bell pepper, sliced
  • 1/2 yellow bel pepper, sliced
  • 1/2 orange bell pepper, sliced
  • 1/2 yellow onion, sliced
  • 3 tablespoons olive oil

Directions:

Wash and cut chicken into strips and set aside. 

Slice peppers and onion (we only use half of each, but feel free to use the entire pepper if you’d like)Our Chef likes to make sure our veggies are fresh.Not sure about this one.On to Yellow…And of course Orange.TaDa! All of our Veggies are ready!He forgot to try the white one…“Yuck!”Now back to our recipe…

Add peppers, onions, chicken, garlic and olive oil to a large bowl. 

Add lime juice.

We’re sad to report our Cilantro plant is not doing well, so we had to buy a bundle at the store.
Wash and chop cilantro.

Add cilantro and mix everything together.Brush pan with olive oil.Dump everything on pan and spread out.Bake in oven at 375 for 15-20 mins.About half way through, stir.Check temp of chicken to make sure it’s cooked (165 f).Take out of oven when chicken is done.

Warm tortillas (microwave for 20 second works well)

I think a little Chef was snacking on ours…Put fajitas in tortilla (We added Corn Salsa -recipe coming soon)Yum!
