Dark Chocolate Peanut Butter Easter Eggs – Dairyfree

This time of year just wouldn’t be the same without being able to enjoy a delicious Chocolate Peanut Butter Egg! Dairyfree doesn’t have to = Dessert free! This yummy recipe will hit the spot and if you have any leftover, could make a nice gift for your loved ones. (we did not, because they’re just too darn delicious)

Although this is an easy recipe with just a few ingredients, we had some challenges along the way because our Chef was in a grumpy mood. But he pulled through to finish these delicious treats, just in time to share for Easter.

Ingredients:

  • 2 cups powdered sugar
  • 1 1/2 cup peanut butter
  • 1 tablespoon coconut milk (We used So delicious Vanilla flavor)
  • 1 4 ounce bar of 100% Cocoa or chocolate of your choice (We used Ghiradeli)
  • 8 tablespoons nondairy butter
  • 4 tablespoons sugar

Directions:

Our Chef loves using the mixer! Besides being a bit grumpy he’s also in a silly mood so he thought he’d try to ride it.  
Nothing wrong with a little fun while baking. All good until you realize it’s not going to gallop off like a horse. Life is rough for our Toddler Chef some days! After a spoonful (or two) of peanut butter we were back on track. Tip: never attempt to bake with a hungry Toddler Chef! 

Add peanut butter and powdered sugar to the mixer. Mix on medium until combined. Then add milk, and mix for a few more seconds. The mix is hard to resist! Yum!   Use rolling pin and roll out mix. Similar to cookie dough. Spread dough until about an inch thick.  Use cookie cutter to shape eggs.  Once eggs are cut out put in refrigerator for 15 minutes to make them easier to dip in chocolate.

This is the perfect time to make your chocolate.   Add butter and chocolate pieces to metal bowl. Place bowl in large pot, heat on medium until completely melted. Stir often.  Remove bowl and add sugar to chocolate.   Mix together. Dip eggs in chocolate and put on wax or parchment paper. This is a messy job but our Toddler Chef is up for the challenge! Put the eggs in the refrigerator for 15 more minutes to harden, while you clean up your Chef. Put eggs in a basket or on a plate and you’re ready to enjoy your Easter treat! Enjoy!
