Crockpot Beef Stew – Dairyfree/Tomatofree

Yes, you read the title right, we made a Beef Stew without tomato and dairy, and it is delicious! This recipe is so simple, typing it out takes longer than the entire prep. Everything goes into the crockpot, so cleanup is easy too! 

Some of the ingredients in this recipe may seem a bit odd (chicken broth, Chili seasoning and stir fry beef in a stew?) but we promise it all works together and creates a tasty, healthier version of this comfort food. 

Ingredients:

  • 1 bag baby carrots
  • 1 pound beef (we used organic beef sirloin for stir fry)
  • 1 onion
  • 1 bag baby potatoes (mixed)
  • 1 packet Chili seasoning mix
  • 1 carton organic chicken broth

Directions:

Peel and chop onion.  Wash potatoes, carrots and meat. Add vegetables, beef, and chicken stock to Crockpot and set to low or 6-8 hours.  Half way through, stir in the Chili seasoning. We used chili seasoning because the beef stew seasoning packet has tomato. The chili seasoning adds a delicious flavor to our stew. Now that the only thing left to do is wait for the timer, this is a perfect time to take a nap.  By now your dinner should be just about ready.   Serve as a stew in a bowl or as a roast on a plate.  Enjoy!
