Dark Chocolate Covered Peanut Butter Hearts – Dairyfree

Who needs store bought candy filled with ingredients you can’t pronounce when you can make your own special treat for your Loves, just in time for Valentine’s Day.

A quick trip to the grocery store and you’ll have everything you need to make our yummy hearts in about 30 minutes. 

Happy Valentine’s Day! 

Ingredients:

  • 2 bars of 100% cocoa baking chocolate
  • 3 sticks of nondairy butter (we used earth balance Soyfree)
  • 1 cup sugar
  • 1 1/2 cups peanut butter
  • 4 cups powdered sugar
  • 1 tablespoon vanilla
  • 3 tablespoons coconut milk (or other nondairy milk)

Directions:

Add butter to mixer. (The Chef follows directions) Take butter out of package before adding to mixer. (Just need 1 stick for this part) Add powdered sugar, peanut butter and vanilla and mix on medium until combined.   When everything is mixed, add milk.  Mix will shape together easily when complete. Without the milk it may be too crumbly.  Remove a handfull and place on wax or parchment paper (we used a baking mat)   Press flat and use small heart cookie cutter to make shape. Set aside.   Break up chocolate and add it to a large metal or glass mixing bowl with butter (2 sticks). Put mixing bowl in large pot of water. Water should be heating on low/medium.

Stir constantly.   When chocolate is melted and smooth, remove from water and stir in sugar.   The next part can be a bit messy but we have tips to get you through. 

Put peanut butter heart in chocolate. Use tongs (pick up on sides of heart). Turn over to coat both sides. Then put on top of wax or parchment paper (extra chocolate will drip off). 
  After you’ve dipped your last heart, pick up first hearts with tongs (same way as before) and transfer them one at a time to a new piece of wax or parchment paper (on a cookie sheet).  By now the extra chocolate has dropped off and your new pan will have prettier chocolate hearts. We added some colored sprinkles to some to make them a little more festive. We used India Tree Gourmet brand sprinkles (no dyes, made from vegetables).
Now all you have to do is put them in the frig for at least an hour.
    This made the Chef very grumpy because no one wants to wait for a yummy treat!   Take them out of the frig and put on a festive plate and you’re ready to enjoy! Enjoy!
