We’ve tried a lot of dairyfree mashed potatoes over this past year and let me tell you, most of them have been just plain awful. If you’re tired of eating pasty mashed potatoes or a version that taste more like chicken soup, this recipe is going to hit the spot!
This recipe will have you asking, are you sure that’s dairyfree?
- 3 pound bag yellow potatoes (organic preferably)
- 1 cup coconut milk (we use So Delicious Original Flavor)
- 2 tablespoons chopped garlic (wet kind in the jar)
- 4 tablespoons nondairy butter (we use Earth Balance olive oil)
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Peel potatoes. Slice potatoes into cubes. Wash potatoes. Especially the ones that hit the floor. Add potatoes to boiling water and cook 8-10 mins until potato falls off fork. Stir potatoes occasionally. Because the Chef finds it fun.
