Peanut Butter Cookies – Dairy Free, Gluten Free

  
This is the simplest Peanut Butter Cookie recipe you will ever make. We are literally addicted to these cookies and if you are dairy free you know how hard it is to find a yummy dessert. 

Ingredients: 

  • 1 cup peanut butter (we use Wegmans organic brand)
  • 1 cup sugar (again – Wegmans organic brand)
  • 1 teaspoon Vanilla extract
  • 1 Egg (beaten)

  
1. Beat the egg, then add the rest of the ingredients. Mix well. 

2. Roll dough into little balls and put on baking sheet. (I like to cover baking sheet with parchment paper but if you don’t have any, don’t worry) 

3. Use fork to make crisscross design and press cookies flat. 

4. Bake for 10-12 min at 325. 

  For an extra dose of yummy, we like to dunk them in vanilla flavored coconut milk.
